Ethiopian Lunch
After V & I worked up our appetites at the DAM, we had a deliciously filling birthday lunch at Abyssinia, before heading to Mod Livin', then to S. Broadway for more shopping (like the fabulous Hazel & Dewey kitchenware boutique), and lastly a quick stop at Happy Coffee to energize for the trip home.

Sweet Potato Black Bean Chili
Saute chunks of sweet potato in spices, add black beans and water, let simmer until fully cooked through. Next day it is even tastier! Top with plain yogurt and cilantro.
